How many calories are in a home-cooked dish?
A normal serving of each dish, with the recipe in plain sight: the raw ingredients, what they weigh on the plate and which official entry each number comes from. So you know what counts and can adjust it to your plate.
Where do the numbers come from?
Each dish is a recipe with serving-size amounts (the Spanish Nutrition Society’s where they exist) and ingredients from official databases: USDA FoodData Central, BEDCA (Spain) and the German Bundeslebensmittelschlüssel. Cooked weight comes from comparing the raw and cooked entries of the same food, and each dish is checked against ready-made dish entries where they exist. What varies most from kitchen to kitchen is the oil, so it is always in the recipe.
